Don’t Make a Boring Salad

Spice Up Your Salads

Tip 1: Choose veggies (or fruits) with lots of different colors

  • Red-Apple Pieces, Tomato, bell pepper
  • Orange-Carrot, bell pepper
  • Yellow-Roasted Zucchini, bell pepper
  • Green (that isn’t romaine)-cucumber, broccoli,  kale, spinach, arugula, mixed greens
  • Blue/Purple-Blueberries, Roasted Eggplant, Purple Cabbage

Tip 2: Choose different textures

  • crunchy
  • squishy
  • chewy

Tip 3: Make it filling

  • Protein-chickpeas, chicken, tuna, salmon, hard boiled eggs
  • Healthy Fat-chia seeds, nuts, olive oil, avocado, bacon

Tip 4: Give it variety of flavor

  • Dressing-Play with tahini, nut butters, fruit to make it sweet, different vinegar’s/acids
  • Salt it up-Salt brings out flavor, go for Grey Celtic Salt, Pink Himalayan Salt, Back Hawaiian Salt
  • Fat is flavor
  • Herbs & Spices
  • Roast Veggies

I hold a BS in Community Health Education and a minor in Nutrition from the University of Wisconsin-LaCrosse. I filled an internship in Sweden, at Linnaeus University where I taught Health Education Courses and experienced how Swedish culture -or in Maya’s words beliefs- drive their thoughts of “lagom” (not too much, not too little), which drive emotions of peace, which drive physical habits of biking to work and social “fika” (coffee breaks).

Every day, my mission is to lead by example as an energetic motivator to guide people toward a better quality of life. I can’t wait to meet you!
