Vanilla Bean Almond Butter Fudge with Unsweetened Chocolate (High Fat, Low sugar, Paleo, Dairy & Gluten Free)

The no (white and refined) sugar lifestyle is a lifestyle that I would highly encourage everyone to adopt. Our clients know, in order to get off the sugar, they have to increase fat. Good, healthy fat won’t make you fat, I promise. This is a great recipe to help you step yourself down off sugar.

Remember, for those with sugar addiction and cravings, you can always step the sugar down within the recipe too, meaning, your first batch, make with 1/2 cup honey, your second batch with 1/4 cup honey, and so on, until you’re making it without any!

Ingredients

2 cups almond butter (raw or roasted, salt or no salt, if allergic, use Sunbutter)

3-4 heaping Tbsps coconut oil warmed into a liquid

1 tsp vanilla or beans from 1/2 a scraped vanilla bean pot (Or 1 Tbsp vanilla)

1 heaping Tbsp raw honey optional!

1/2 cup unsweetened shredded coconut

1/2 cup 100% chocolate bar crushed (can use mini/sweetened chocolate chips), unsweetened

unrefined sea salt if nut butter is UNsalted

Instructions

1. Combine liquid coconut oil, almond butter, vanilla, and salt in a bowl.

2. This mixture will be entirely liquid.

3. Line a rimmed baking sheet or brownie pan with wax paper.

4. Pour the almond butter mixture into the pan.

5. Sprinkle the chocolate and coconut flakes on the top.

6. IPlace the pan flat, in the freezer and freeze until completely hardened, about 20 minutes.

7. Remove and cut into squares.

8. Store squares in the fridge.
