Roasted Beets With Fresh Ginger


6 pounds beets

2 large knobs fresh ginger

Unrefined sea salt

Avocado Oil (or other neutral tasting oil), can use olive oil

2 fresh lemons

Tin foil


1. Scrub and wash the beets. With a sharp knife, cut off the ends of the beets (both top and bottom). With a peeler, peel the beet skins off and discard.

2. If the beets are extra large, cut in half. Sprinkle with salt and wrap each beet in foil and place in baking dishes. Bake for 45-60 minutes or until beets are soft and you can slices easily.

3. Remove from oven and let cool until you can handle the beets with your hands. Cut into large pieces and place into a bowl. Grate fresh ginger over them, sprinkle with more salt if desired, add oil and lemon juice to liking, toss and serve! Best in flavor when room temperature or cold
