No Refined Sugar, Cranberry Sauce

Ingredients –

24 oz. cranberries (typically 2 bags)
3 oranges
3/4 cup grade B maple syrup
3 T vanilla extract
1 T unrefined sea salt
1 1/2 T cinnamon
1/2 T nutmeg
1 T freshly grated ginger
2 T freshly grated lemon rind
1 pint blueberries

Instructions

Slice 2 oranges – skin included! – into thin rounds, all the way through. It will come out like a complete thin, circle with the skin on.

In a large pot over medium high heat, dump the cranberries, all sliced oranges and maple syrup in.

Bring the mix to a low boil until the cranberries begin to ‘pop’ (you’ll hear them!).

Then add all remaining ingredients and the juice of the 3rd orange.

Allow to simmer for approximately 45-60 minutes, stirring occasionally.

***If you want to sweeten your cranberry sauce more, you may use more maple syrup, honey, coconut sugar, or unrefined raw cane sugar. Simply taste the mixture – careful it will be hot – and add according to your family’s taste.

….and yes, you can eat the orange peels, they are delicious 🙂
