Mediterranean Cucumber Tomato Salad

Dressing Ingredients –

1/4 cup extra-virgin olive oil

2 tablespoons red-wine vinegar

1 tablespoon chopped fresh, or dried oregano

¼ teaspoon sea salt and ¼ teaspoon pepper

Salad Ingredients –

2 large cucumbers, peeled

1 cup tomatoes, chopped

½ cup thinly sliced red onion

¼ cup sliced pitted Kalamata olives

Optional: Top with sprinkled feta or goat cheese


Whisk oil, vinegar, oregano, salt and pepper together in a small bowl and set aside. 

If you have a vegetable spiralizer, use the chipper blade attachment (for thick noodles) to cut the cucumber lengthwise into “noodles.” If you do not have a spiralizer, just peel and slice the cucumber to desired thickness.

Combine cucumber, tomatoes, onion, cheese and olives in a bowl and toss to coat with the vinaigrette.

Serve as a side or top with tuna, chicken or shrimp and make it a meal!
