Chickpea (Garbanzo Bean) Fudge

Ingredients –

1 can low sodium chickpeas (1 1/2 cups total)
1 Tbsp vanilla extract
1/2 Tbsp unrefined sea salt
1/4 raw honey (or more according to taste and liking)
1/2 cup sunflower seed butter (sunbutter), peanut butter, almond butter OR cashew butter
2 heaping Tbsp of coconut oil
optional chocolate chip add-ins


Combine all ingredients EXCEPT the chocolate chip add-ins into a blender of food processor and blend until smooth. (You may have to use a spatula to bring the dough-like mixture together occasionally as blending).

Once combined into a ‘dough’ simple add in the chocolate chips.

Add dough to muffin tins or into one large rimmed pan for ‘fudge’.

Freeze for a few hours to over night and enjoy!

Keep them in the freezer for best results. You may want to let them ‘un-harden’ for a few minutes before consuming.
